About the Recipe

I. Love. This. Drink.
It's tangy, lightly sweet, refreshing and could be served on the rocks with sparkling water and/or your favorite spirit. I will often 'eat' this for breakfast. Yes, it's lower glycemic for a juice. And yes, it's packed with fiber. However, there's enough sugar in the fruit and coconut water to cause an insulin spike if you don't eat it with protein and/or fat on the side. My solution? I often drink this with Jilly Tea for breakfast to get a full dose of MCT fats, 20 grams of collagen protein, phytonutrients, vitamins and minerals to energize and kick start my day like a boss. An extremely healthy, boss.

-Spinach is packed with carotenoids which are antioxidants that help prevent chronic diseases such as cancer and is high in vitamins A, C, E and K.
-Parsley also contains carotenoids and, additionally, possess flavonoids and phenolic compounds which are potent antioxidants with anti-inflammatory, anti-cancer and immune-boosting properties. Its volatile oils can protect against cancer and are antibacterial. Additionally, parsley contains apigenin which is known to protect nerve cells.
-Basil contains phenolic acids, flavonoids, rosmarinic acid, and aromatic compounds used traditionally in folk medicine to treat cancer, digestive issues, reduce inflammation, immune support and more.
-Cucumber contains flavonoids, phenols, carotenoids, tannins and other phytochemicals that support blood sugar regulation, detoxification, proper digestion and can reduce inflammation.
-Green Apples are high in pectin, a prebiotic fiber that feeds the 'good bugs' in your gut. The phytochemicals in green apples can protect your cells' DNA from oxidative damage.
-Coconut Water in addition to whole food forms of sugars, vitamins and minerals, coconut water is super hydrating and a great option for electrolyte support. Additionally, coconut water can support proper post-workout recovery and cardiovascular health.
-Yellow Fruit posses carotenoids and bioflavonoids which are antioxidants that protect against heart disease and cancer, promote healthy vision and a strong immune system.
-Limes are high in flavonoids which have powerful antioxidant and antibiotic effects.

Ingredients

  • 1 cup packed fresh spinach

  • 1/3 cup fresh parsely

  • 1/3 cup fresh basil

  • 1/2 large or 1 small cucumber (skin on)

  • 1 green apple cored and quartered (skin on)

  • 1 cup coconut water (no added sugar)

  • 1/3 cup frozen yellow fruit (peaches/pineapple/mango etc.)

  • 1/2 lime peeled

  • Water to obtain proper consistency 

Preparation

Add all ingredients--except wate--to a high powered blender and blend until completely smooth. Add water if you want it a little thinner. Pour and serve immediately or refrigerate and store for up to 3 days.
